2 ingredients banana pancakes

Who doesn’t like pancakes? ok, my husband doesn’t, but me and my kids love them and with Pancake Day just around the corner there’s no excuse not to have some.

I love normal pancakes but over the weekend I thought I would try out something I’ve seen all over PinterestBanana Pancakes. And what is great about these is that you only need 2 ingredients. Just bananas and eggs. How simple is that?

Making the pancakes

So all you need to do to make these yummy banana pancakes is mash up some bananas and for every 1 banana you add 2 eggs. So I made ours using 3 bananas and 6 eggs.

Now the first couple I made didn’t turn out that well, as I made them with just a little oil but the tops weren’t getting cooked and when I tried to flip them over they just all fell apart. So I figured out that you have to make them like you would a fried egg. Add a lot of oil to the pan, enough that you can throw some over the tops of the pancakes to cook them. But don’t worry, these don’t come out tasting like fried eggs. They taste like pancakes with banana. I guess what they are supposed to taste like.

I made a big batch of these and shared them out between me and my 3 kids and squirted a bit of Choc Shot on top. People have said that these freeze well too, but I haven’t tried that yet so can’t really comment on it.

  4. All my boys love pancakes and obe in particular loves bananas too, he can eat a bunch of bananas in one sitting.   12. Wow. I wouldn’t think you’ll be able to make pancakes with banana and eggs alone. I really want to try this. Great for gluten intolerance people too.
