I love scones! Especially when they are covered in loads of jam and clotted cream. Their not very healthy, I know. And definitely not a good choice when I am doing my fitness challenge and trying to lose a bit of weight. But even when your eating healthy you still have to allow yourself a treat now and again and scones are my little treat
To make these you will need:
- 225g plain flour
- 2 tsp baking powder
- 1/2 tsp salt
- 25g caster sugar
- 50g butter
- 150ml milk
- handful of raisins
Turn the oven to gas mark 6 to warm it up. Mix the flour, baking powder, salt and sugar in a bowl, then rub in the butter until it looks like breadcrumbs. Add the milk a bit at a time until you have a nice firm dough. Mix in the raisins by hand. Place on a floured surface and make a big circle about 1.5 cm thick.
Cut out the scones with a cookie cutter and place on to a baking sheet. Brush the tops with some milk and bake for 12 minutes or until firm and risen.
Once ready, cut in half and add jam and cream. Sit back with a cup of tea and enjoy.
The great thing about these scones is that they can be frozen too. So you can make a big batch and have half for no and half for another day.
