I normally do my food shopping every two weeks. And before I buy it I plan what we will be eating for tea every night. Last time I did the shopping I was in a rush and I forgot to buy one of the meals, so instead I had only 13 main meals instead of 14. The night when we had nothing for tea was when my husband was at work, so I just needed to get something for me and the kids. I thought about ordering a takeaway, but money is tight at the moment as we are saving for a million and one things. So I raided the cupboards and freezer and managed to find a few chicken burgers and chips for the kids. Not very healthy I know, but it was that or nothing.
But that just left me. I was quite hungry as I had only had slice of toast and cup of tea for my dinner. So again I raided the cupboards and found one pack of Egg Noodles left and in the back of the freezer a little bit of stir fry veg. That would have to do. As I was making it I went to grab some soy sauce out the cupboard to realize there was none. I didn’t really fancy eating it plain, so a made a little concoction up. I added a teaspoon of honey, a bit of balsamic vinegar and a tablespoon of peanut butter to the noodles and mixed everything all together.
I was expecting it to taste a bit like a dogs dinner, but to my surprise it was really nice! So nice infact that I will definitely be making this again for my tea.
- Egg noodles
- Stir fry veg pack
- Balsamic vinegar
- 1 tsp honey
- 1 tbsp peanut butter
1. Fry the veg pack in a little oil. meanwhile cooked the noodle in some boiling water. Once the noodles are cooked drain the water and add the honey, balsamic vinegar and peanut butter, give a good mix and add to the stir fry veg. warm through and serve
