Quick nutty noodle stir fry

I normally do my food shopping every two weeks. And before I buy it I plan what we will be eating for tea every night. Last time I did the shopping I was in a rush and I forgot to buy one of the meals, so instead I had only 13 main meals instead of 14. The night when we had nothing for tea was when my husband was at work, so I just needed to get something for me and the kids. I thought about ordering a takeaway, but money is tight at the moment as we are saving for a million and one things. So I raided the cupboards and freezer and managed to find a few chicken burgers and chips for the kids. Not very healthy I know, but it was that or nothing.

But that just left me. I was quite hungry as I had only had slice of toast and cup of tea for my dinner. So again I raided the cupboards and found one pack of Egg Noodles left and in the back of the freezer a little bit of stir fry veg. That would have to do. As I was making it I went to grab some soy sauce out the cupboard to realise there was none. I didn’t really fancy eating it plain, so a made a little concoction up. I added a teaspoon of honey, a bit of balsamic vinegar and a tablespoon of peanut butter to the noodles and mixed everything all together.

I was expecting it to taste a bit like a dogs dinner, but to my surprise it was really nice! So nice in fact that I will definitely be making this again for my tea.

  • Egg noodles
  • Stir fry veg pack
  • Balsamic vinegar
  • 1 tsp honey
  • 1 tbsp peanut butter
1. Fry the veg pack in a little oil. meanwhile cooked the noodle in some boiling water. Once the noodles are cooked drain the water and add the honey, balsamic vinegar and peanut butter, give a good mix and add to the stir fry veg. warm through and serve

  1. Sounds yummy. I like stir fry every once in awhile. My husband is a huge fan of it and would love this recipe! Thank you so much for sharing- sometimes the best best are made from necessity 🙂

  2. I feel like some of the best recipes are the ones you make up on the spot out of necessity. This looks yummy!

I’m curious, what meal of the day is considered “tea” in the UK? I was under the impression that tea was an afternoon tea, but your post makes it seem like a synonym for dinner.

  3. Some of the best meals are created by just tossing things together! I’ve created quite a few delicious meals this way. Your Nutty Noodle Stir Fry looks great – I’ll be trying it soon!

  4. Turned out quite yummy by the looks of it. I wish I was spontaneous like that when it comes to cooking lol I can’t remember the last time I just “threw things in the pot”. My hubby though is GREAT at doing that.
