Happy St. Patrick’s Day, everyone! It’s Dani from over at Busy Mom’s Helper again, sharing with you a perfect, not-green-but-still-St-Patricks-friendly recipe with you today: Mint Cream Frosting!
Good for about 12 cookie sandwiches, or 12 cupcakes!
2 sticks (1 cup) Butter, room temperature
2 1/2 cups Powdered Sugar
2 tsp. Vanilla Extract
4 oz. Andes Mint Pieces
Melt the Andes pieces, then allow to cool.
With your mixer, whisk the butter for about 5 minutes on medium-high speed. Be sure to get the stuff on the edges!
While still mixing, on low, slowly add the powdered sugar.
Add the vanilla and melted chocolate, whipping at medium-high speed about 2-3 minutes, until it’s fluffy. Again, be sure to get the edges!
Use as a frosting for cookie sandwiches, cupcakes or even brownies!
Note: If you really want green, just add some food coloring!
