Me and my husband are trying to eat healthy. I’m a vegetarian so I use meat-free quorn chicken and mince in my meals. And as it’s easier, so does my husband, even though he is a meat eater. As quorn is healthier than meat he doesn’t mind. You can find lot’s of meat free recipes using quorn and a delicious recipes using Quorn vegetarian chicken pieces
Here’s the recipe for Chicken and Mango Veg Bake. I used quorn chicken, but you could also use real chicken if you prefer
Ingredients:
Chicken
1 Mango
2 Spring Onions
3-4 Carrots
Broccoli 
few tablespoons of coriander
1/4 cup of Lime juice
1.  Pre-heat the oven to gas mark 4 or 350 degrees. Peel and chop the mango and puree with half a cup of water and the lime juice. Add the Spring onions, chicken, mango puree and coriander to an ovenproof dish. Add the chopped carrots and broccoli. Cook for about 1 hour

  1. We love mangos! We get a bountiful basket every week (its a produce co-op) and we get mangos a lot. I’m going to try your recipe but instead of adding chicken (or fake chicken) I’m going to add a bunch ofother veggies. Thanks for the idea!

  3. I’ve created a ton of various chicken dishes but have never tried mango chicken. Actually, I don’t know if I have ever actually eaten a mango now that I think of it. But this sounds really good!

  4. I’ve never tried a recipe with mango before. I love mangoes and grew up in the Caribbean with mango trees in my backyard and still never had a recipe with one. Will have to give this a try. Thanks for sharing.
