Quick Veg Curry


I was having one of those days when I was running late with everything. Time was getting on and we were supposed to be having a stew for tea. There was no way I could make this in time before the kids had to have their bath and put their pj’s on and get in bed ready for nursery tomorrow. Unless I wanted them to a bit later but tired in the morning. 
So I decided to swap some of my meals around. I would have the stew tomorrow and today I would have our quick veg curry. I call it my quick veg curry, but infact I added some fake chicken (Quorn) to it.
Ingredients:
  • Frozen mixed veg
  • frozen broad beans
  • quorn chicken (optional) 
  • half a tbsp Pataks Korma Paste
  • Dried coriander
  • Onions
  • 160ml can of Coconut Cream
1. Cook your onions in a little oil. (I used frozen onions as it was quicker). Then add the frozen veg, bean and chicken. Cook for about 5-10 mins then add the korma paste and coriander. Mix well. Add the coconut cream, warm through then serve. 
I served this by itself, but it also nice with some rice
