Chicken & Veg one-pot

This is one of my favorite recipes
Chicken and veg one-pot
Serves 4    Ready in 35 minutes    511 cals    25g fat
  • 1 onion
  • 700g potatoes
  • chicken cut into pieces
  • 200g carrots
  • 300ml stock
  • Broccoli
  • 1 bay leaf
  • frozen peas
  • 200ml creme fraiche
Heat a bit of oil in a large pan. Add the chicken (or in my case, I use quorn, as I’m a vegetarian) and the onion and cook for 5 minutes.
Add the potatoes, carrots, broccoli and bay leaf. Pour in the stock (chicken is best, but i use vegetable stock). Bring to the boil and cover and cook for about 20 minutes.
Add the frozen peas and creme fraiche. Cook for another 2 minutes. remove the bay leaf and serve.
The calories and fat contain shown are approximate and are for use with real chicken, these are lower if quorn is used.
