I just love cottage pie, especially when it’s horrible outside with all this snowy weather.
First, let me say this isn’t called cheats cottage pie because I don’t use any meat, you can still use meat but I much prefer Quorn. Meat free and a lot less fat in it. I call this my Cheat’s Cottage Pie because I don’t put it in the oven.
Ingredients:
- Mince
- Potatoes
- Onions
- Carrots
- Peas
- Sweetcorn
- Thyme
- stock cube or gravy granules
1. Peel and chop your potatoes and place in a pan of water, and cook.
2. Meanwhile, chop your onion and carrots in to cubes and fry for 5 minutes, add your mince. Next add some boiled water till covered. Then either add a stock cube or gravy granules. I like to add Bisto onion gravy granules. add your thyme then bring to boil and simmer.
3. When your potatoes are ready, drain and mash with some milk and butter if liked. Then here comes the cheat bit. But the pan of mash underneath the grill! This makes the top nice and crispy. And if your not counting the calories then you can also add some grated cheese. YUM!
4. While your potatoes are grilling, and a tin of peas and sweetcorn to the mince. Warm through and place on plates. When the mash is done place a large scoop on top of the mince.

Sometimes I forget that these quick and easy meals are tummy pleasers. Thanks for sharing a little bit of comfort food today!
